The HYDRA-FORM MOLDER/CHILLER SYSTEM is the most efficient way of molding and chilling loaves of mozzarella. The cheese hoops are submersed immediately after being filled and remain submersed in the chill tank throughout the cooling process. This creates the ideal environment for cooling cheese quickly and efficiently, giving the cheese loaves lower temperatures and uniform shape before being ejected out of the hoops into the brining system.
